Ingredients:
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
3/4 teaspoon salt (only 1/2 teaspoon if you are using butter instead of the oil)
4-5 large bananas, mashed
3/4 cup white sugar
1/3 cup vegetable oil (or melted butter)
1 teaspoon vanilla extract
1/2 cup chopped walnuts or pecans (optional, I used some chopped walnuts)
1 tablespoon sugar for the tops (optional)
Directions:
Preheat oven to 350F.
Coat muffin pans with non-stick spray, or use paper liners I find this much easier and less messy.
Sift together flour, baking powder, baking soda, cinnamon, and salt. Set aside.
Combine bananas, sugar, vanilla and oil (or butter) in a large bowl.
Fold in flour mixture, and mix until smooth. Add nuts (optional).
Scoop into muffin pan. Add a bit of sugar to each muffin, this will give your muffins that nice looking top with a little crunch.
Bake in preheated oven.
If baking mini muffins: Bake for 10 to 15 minutes.
For large muffins: Bake for 25 to 30 minutes.
Muffins will spring back when lightly tapped.
